Ingredients:
2 Cups boiled rice
1 tablespoon finely chopped coriander
1 cup gram flour
1/2 tea spoon coriander powder
2 cups oil
Salt to taste
2 finally chopped green chilli
1 teaspoon grated ginger
1/4 teaspoon red chilli powder
1/2 squeezed lime (optional)
1 cup water
* 4 servings
Method:
1) In a big sized bowl, mix dry ingredients like salt, green chilli, ginger, lemon juice, red chilli powder and coriander leaves along with pre-cooked rice.
2) Now make small balls (like lemon) of the rice mixture
3) In a separate bowl mix gram flour, salt and chilli powder
4) Add water to the gram flour mixture and stir to form a nice smooth batter
5) Heat oil in a pan
6) Dip the rice balls into the batter
7) Fry the coated rice balls in oil until a golden brown crust appears
8) Take it out and plate it on a napkin
Tip: Serve the crisp fritters with ketchup or cilantro chutney.
ROTI PORRIDGE: Just like your any other breakfast cereal, this roti porridge is also extremely healthy and a perfect way to jumpstart the day. Customize the porridge with any fruit or nut of your choice and provide a scrumptious spin to your brittle rotis.
Ingredients:
4 leftover chappatis
1/2 cubed apple
1 round banana slices
Pinch of cardamom powder
2 cups milk
2 teaspoon sugar
2 teaspoon honey
1/2 cup coarsely chopped dry fruits like almonds, pistachio and raisins
* 1 serving
Method:
1. Heat the chapattis in oven for 1-2 minutes
2) Once you take out the chapattis, they will be crisp
3) Break the chapattis coarsely and grind it in the mixer
4) Now in a bowl, add milk, sugar, honey and cardamom powder together
5) Garnish it with chopped dry fruits, and slices of fruits

Ingredients:
1 cup mix vegetable
1 finely chopped onion
3 finely chopped chillies
1 teaspoon ginger garlic paste
1 teaspoon chaat masala
1 tablespoon finely chopped coriander
1 tablespoon chickpea flour
Salt to taste
1 cup oil
Method:
1) In a large sized bowl mash the cooked mix vegetable
2) Once crushed, add onion, chillies, garlic paste and chickpea flour to the mishmash
3) Now add dry spices like salt and chaat masala along with coriander
4) Mix all the ingredients together and make short round cakes of it
5) Now heat a skittle and sprinkle few oil drops on it
6) Now place the round cakes on the skittle and cook on medium heat till a brown crust appears on both sides

DAAL PARANTHAS: A hot, comforting and oh-so-good way of using the residual daal. An extremely simple take on good’ol daal that you can throw in less than five minutes. The touch of spices adds up to a zesty finish.
Ingredients:
2 cups Wheat Flour
1 cup cooked Dal
1/2 teaspoon salt
1 teaspoon Chilli powder
1/2 teaspoon Garam Masala Powder
2 tablespoon coriander
2 tablespoon oil
1 Cup of water
Method:
1) Knead the wheat flour with cooked dal, chilli powder, salt, garam masala powder and coriander by adding water to it
2) Let the dough rest for 15-20 minutes
3) Now heat the tawa and sprinkle few drops of oil on it
4) Meanwhile, make a flat roti out of the dough with the help of a rolling pin
5) Place the roti on the heated tawa and cook from both sides
Tip: You can also add finally chopped onions to the dough while kneading
BREAD BARFI: This is a novel way to round up your hard bread loaves. Bread, milk, coconut and sugar make up this decadent dessert. It is not only a clever leftover idea but also a great treat for sweet tooth.Ingredients:
2 cups breadcrumbs
4 table spoons oil/ ghee
1 cup milk
1 grated coconut
1 cup sugar
2 or 3 drops of rose essence
8 to 10 coarsely chopped cashew nuts and almonds
* 20-22 servings
Method:
1) Soak bread crumbs in milk for 10-15 minutes
2) Now in a sauce pan, mix coconut and sugar and stir it continuously until sugar melts
3) Add soaked bread crumbs to the sugar and coconut mixture
4) At this point add oil or ghee to the mixture
5) After 2-3 minutes when the mixture starts leaving the sides of the pan, add rose essence and chopped dry fruits to it
6) Spread out the mixture on a greasing tray and even it out
7) Now allow it to cool for 2-3 hours and cut in your favorite shape
